I’m a rock-star of a Chef who specializes in California cuisine. I own and operate a catering company in California’s bread-basket, the San Joaquin Valley – Fresno, CA to be exact. Having grown up in the San Joaquin, many of my recipes are influenced by the wine country and I place a heavy emphasis on using locally grown and sustainable produce. So much of an emphasis on locally grown produce that I’ve dedicated an entire greenhouse to growing my own herbs and vegetables! My food speaks for itself and I try and put a little “California” into every bite.

I don’t just cook regional CA cuisine though… Having worked in restaurants for more than 14 years, I’ve had a chance to cook everything from chicken strips with ranch to squab braised in a fennel-port jus with lamb’s ear mushrooms served atop anise-hysop infused butternut squash puree. I’ve flipped burgers at sports bars that have paper napkins and I’ve made demi-glace at white tablecloth Parisian dinner houses. Basically, I’ve taken knowledge from every restaurant and Chef I’ve ever worked with and incorporated that into my own cuisine.

Aside from cooking, a passion of mine is writing and I’m currently pursuing my degree in Journalism and Mass Communications. During the week, my job title is Social Media Director at Boling Associates Advertising & Marketing and I spend my nine-to-five writing copy, creating industry blogs and playing on Facebook. Not a bad job at all… I write short stories and have hopes to one day finish what is sure to be the next Great American novel. As a matter of fact, some of my short stories are based on life in the kitchen and I will posts some of those here for your enjoyment.
